• Understand the reasons for the failure of HACCP system

• Understand Codex Alimentarius 12 successive steps for HACCP implementation

• Understand duties and responsibilities for the HACCP team members.

All food handlers engaged in food handling and involved with HACCP implementation.

COURSE CONTENTS

It is a highly interactive course that will involve the following areas

• Hazards & its definitions, Prerequisite programs for HACCP, Advantages for HACCP implementation, Reasons for the failure of HACCP, Codex Alimentarius 12 steps for HACCP implementation

• Assemble the HACCP team, Describe the product, Identify the indented use, Construct flow diagram, On site confirmation of the flow diagrams

• Seven Principles of HACCP1.

• Conduct Hazard analysis.

• Determine Critical control points(CCP).

• Establish critical limits.

• Establish a monitoring system for each CCP5.

• Establish corrective actions to be taken when a CCP is breached.

• Establish verification procedure.

• Establish documentation & record keeping
