All food handlers engaged in food handling and involved with HACCP implementation.

It is a highly interactive course that will involve the following areas
- Hazards & its definitions
- Prerequisite programs for HACCP
- Advantages for HACCP implementation
- Reasons for the failure of HACCP
- Codex Alimentarius 12 steps for HACCP implementation
- Assemble the HACCP team
- Describe the product, Identify the indented use,
- Construct flow diagram, On site confirmation of the flow diagrams
- Seven Principles of HACCP
- Conduct Hazard analysis
- Determine Critical control points(CCP)
- Establish critical limits
- Establish a monitoring system for each CCP
- Establish corrective actions to be taken when a CCP is breached
- Establish verification procedure
- Establish documentation & record keeping
